It's very easy to use, and you can use the water from canned chickpeas or even save and use the water from cooking beans at home. I tried making aquafaba !

It's easy to make. If you're using canned chickpeas, put the juice from the can into a bowl. Mix it with a hand mixer on high speed for about 5 minutes until it becomes white and foamy. I did it manually with a whisk. Look at the photo, it foams up quite a bit! I was impressed! If you're making it from boiled beans, boil the beans until they're soft and then whisk the cooking liquid in the same way. I also tried it with the juice from boiling soybeans. It foams up just as well!! I was impressed!
So, what does it taste like? It tastes like beans! If you think of dairy whipped cream, it tastes completely different. It's "Bean Whip."
The taste was also a bit surprising. It was "beans!". I personally had a lot of negative aspects to the taste. However, it's a good ingredient, so with just a little effort it becomes delicious.

Recipe 01: Simple Meringue - Just add lemon!

- 100ml aquafaba (the water from a can of chickpeas or the water left over from cooking beans)
- 100g sugar
- A few drops of lemon juice (optional)
How to make it
- Place the aquafaba in a bowl and begin mixing on medium speed with a hand mixer.
- Gradually increase the speed and once the aquafaba starts to foam, gradually add the sugar while mixing at high speed.
- Add a few drops of lemon juice (optional) and beat on maximum speed until stiff peaks form. This may take 5 to 10 minutes.
- The foamy meringue can be eaten as is, used as a topping for pies and cakes, or as a baked meringue.
Meringues made with aquafaba are egg-free, so they can be enjoyed safely by people with allergies and vegans. Try making a variety of sweets using this recipe as a starting point.

Recipe 02: Aquafaba Vegan Mayonnaise

- 3 tablespoons aquafaba
- 1 tablespoon white wine vinegar
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder (optional)
- 150ml rapeseed oil or other neutral-tasting oil
How to make it
- Place the aquafaba, white wine vinegar, sugar, salt, and garlic powder in a blender or food processor.
- Mix all the ingredients except the oil thoroughly, then gradually add the oil with the mixer running on low speed until the oil begins to emulsify and the mixture reaches a mayonnaise-like consistency.
- Check the taste and adjust by adding more salt or vinegar if necessary.
- Let it cool and set in the refrigerator, then use it in sandwiches or salads as desired.
I loved using this vegan mayonnaise on sandwiches. It was so easy to make, creamy and delicious.

Recipe 03: Aquafaba Chocolate Mousse Chocolate is a great touch!

- 150ml aquafaba (water from canned chickpeas)
- 100g dark chocolate
- 2 tablespoons of coarse sand
- A few drops of vanilla extract
How to make it
- Melt the dark chocolate in a double boiler and let it cool.
- Place the aquafaba in a bowl and beat on high speed with a hand mixer, gradually adding the sugar as you go, until stiff peaks form.
- Add vanilla extract to melted chocolate and mix.
- Add the chocolate to the aquafaba meringue in small amounts, gently folding it in with a rubber spatula until the mixture is evenly combined.
- Chill the finished mousse in the refrigerator for a few hours to harden.

Instructions :
- Place the aquafaba in a large bowl and begin mixing on high speed with a hand mixer.
- Once the aquafaba begins to foam and turn white, add the cream of tartar (if using).
- Gradually add the sugar and continue beating until stiff peaks form.
- Add the lemon juice and mix again.
- Continue beating until the meringue is stiff.

It is also known as an ingredient in baking powder, helping baked goods rise. It is a natural ingredient and is considered highly safe as a food additive.
