I hear they create a different flavor every year, so I'm looking forward to next year's rice. When I lived in Kochi, I used to add yuzu to my country sushi. I'd like to choose a variety of oils. There are some oils that don't agree with me. Maybe they're highly oxidized? Some oils make me feel sick. So I try to be careful about oxidation and choose virgin oil or flaxseed oil as much as possible, and I'm particular about the producer. I also sometimes get sick from nuts, so I'm very selective. I had a DNA test and it seems I have a low ability to break down oil. I guess that makes me Japanese.
