I'm addicted to the fermented food, white miso! ______
I used to make my own miso (in my Tokyo environment), but the moment I tried Fujiwara Miso Kouji's miso, I thought, "I'm going to stop making it!"

It is made using only natural water from the Hyonose Mountains, high-quality rice and soybeans from Tottori that are produced thanks to the temperature difference, and the power of yeast, and is aged for over a year while classical music is played.

[White miso cream cheese flavor]
It's heavy on cream cheese, so it's recommended for vegans!
Just mix the following!

What you will need:
50g soy milk yogurt, drained
● White miso _ 20g Feel free to adjust the amount to your liking.
I use Fujiwara's miso. The koji is delicious and the result is exquisite. This is just my hobby, so please try other white miso varieties too.
Lemon juice about half a teaspoon
Add as much as you like. It's okay if you don't add it.
● It's delicious when mixed with nuts, dried figs, diets, sesame seeds, etc. to your liking! This time, I added dried persimmons.
Drained Greek yogurt or cream cheese is also delicious!


It's also delicious if you cut a dried persimmon in half and put it on top!
It feels a little more special than putting it on a cracker.

[White miso and tofu potato salad]
I want to eat healthy potato salad!
For those who don't like mayonnaise , this dish comes without mayonnaise.
Just mix the following!

What you will need:
300g of your favorite boiled potatoes. Peel them while they are still hot.
If you like organic ones with the skin on, it's also delicious to roughly mash them.
It's also delicious mashed until smooth.
● White miso _ 50g Feel free to change the amount to your liking.
I use Fujiwara's miso. The koji is delicious and the result is exquisite. This is just my hobby, so please try other white miso varieties too.
Half a tablespoon of olive oil . Adjust the amount to suit your taste.
I use truffle oil if available, or flaxseed oil, and change the oil depending on my mood and body.
1 block of drained silken tofu ( 250-300g)
Salt and pepper (a little to taste ) I use white pepper.
● 2 tablespoons lemon juice I like sourness so I use plenty.
Add it to your taste. It tastes more like potato salad. Vinegar is also fine.
Mustard 1 teaspoon to taste. I like it with it.
● About 3 bunches of dill, to taste. I prefer it if you put it in.
● Cardamom I like to add a little to taste.
● Sometimes we add finely chopped pickled carrots.

With a fork, just mix thoroughly.

This time I added anchovies.

The mustard I received was German.

This is my current favorite olive oil.
