Salmon! It wasn't actually Edomae sushi!?

______________________________________ ______________________________________ _____ _____

Salmon is now a very popular standard sushi ingredient. It's especially popular with children, but it wasn't actually included in Edomae sushi. The reason for this is that salmon was hard to catch during the Edo period, and there was also the problem of a parasite called Anisakis. In an era without freezing technology, it was too dangerous to serve it raw. Even today, there are some sushi restaurants that strictly adhere to the Edomae style and don't serve salmon.

Types of Salmon and the Status of Domestic Salmon

______________________________________ ______________________________________ _____ _____

Currently, the salmon commonly seen in sushi restaurants is mostly imported chilled Atlantic salmon or imported frozen trout salmon. However, recently, salmon that can be eaten raw has been farmed in Japan, and opportunities to enjoy domestic salmon are increasing.

The biggest appeal of domestic salmon farmed in freshwater is that it is free from parasites and can be eaten fresh as sashimi. However, the downside is that it is a little more expensive than imported salmon.

To enjoy salmon as sushi topping, the trick is to sprinkle salt on it to remove any unpleasant odor. You can also enjoy it in a variety of ways, such as with shiso, lemon, seared salmon, or smoked salt.

Atlantic salmon

Atlantic salmon is born in rivers, migrates across the Atlantic Ocean, and returns to the rivers to spawn. It is farmed in large quantities in countries such as Norway, Chile, and Canada, and is a stable source of salmon, so it is often used in sushi restaurants.

Kai Salmon (Yamanashi Prefecture)

A type of rainbow trout. The "Kai Salmon Red" variety, which is raised on a diet containing grape skins, is particularly notable for its vibrant color.

Kinuhime Salmon (Aichi Prefecture)

This variety was developed by crossbreeding Hourai salmon with Amago and Iwana char. It has a firm texture and is recommended to eat raw.

Sanuki salmon (Kagawa Prefecture)

This salmon was created after fish farming in the Tohoku region lost its outlets following the Great East Japan Earthquake. It is raised on feed containing herbs, making it odorless and easy to eat!

Shinshu Salmon (Nagano Prefecture)

This is a cross between a rainbow trout and a brown trout. It has no reproductive ability, so even if it escapes into the wild, it will not multiply. Its meat is thick and perfect for sushi!

Hiroshima Salmon (Hiroshima Prefecture)

The salmon are farmed in freshwater in the Bankokei River in Hiroshima and then raised in the sea off Osakikamijima. The feed contains lemon, a specialty of Hiroshima, giving the salmon a refreshing taste.

Miyagi Salmon (Miyagi Prefecture)

This is farmed Coho salmon. Originally it had a strong odor, but it has been improved and can now be enjoyed as sashimi.
